Seared salmon with coconut dressing

1 carrot – peeled & sliced
1 cucumber – peeled & sliced
3 tomatoes – peeled & sliced
baby spinach – sliced
1 shallot – peeled & sliced
bean sprouts
1 chilli – deseeded & sliced
mint and coriander 
crispy shallots

dressing

30mL fish sauce
30gr palm sugar – shaved
30mL lime juice
90gr coconut milk


Combine the fish sauce, lime juice, palm sugar, and coconut cream in a pot, 
and heat gently to dissolve the sugar - cool. 

Add all ingredients together and dress.
